The amount of ludefisk used will be determined by various factors, e.g. the amount of people in the gathering, the amount of people who are game to try it. Not all Norwegians will go for it.
North Dakota Ludefisk
- By Wally Rutter
Ingredients
An adequate amount of ludefisk, some water, and a teaspoon or two of salt. * Make sure the ludefisk is pure white. Any brownness means impurities and will take away from the taste.
Directions
Using a large pan bring the water and salt to boil. Suspend the ludefisk on a cheesecloth. Heat until flakely, but not until it disintergrates. There are many ways of eating it. I perfer pouring melted butter over it, but the some Norweigens eat it in lefse.
Notes
One suggestion in passing, if any non-Norweigen people are in the room, it might be nice to crack a window.
